Tomato and Spinach Salad

Balsamic Tomato & Spinach Salad serves 4 2 large tomatoes, diced 1 cup fresh spinach, torn/chopped balsamic vinegar salt pepper mozzarella cheese, crumbled (optional) Toss everything together and serve.  Add as much balsamic, salt and pepper to give the tomatoes a nice coating and flavor. This dish goes great with grilled fish or chicken.
