Roasted Tomatoes

 

We had a bunch of tomatoes from our neighbor’s garden and I wasn’t sure what to do with them all.  The first batch we decided to roast, and boy were they delicious!

Ingredients
  • tomatoes, quartered or halved
  • extra virgin olive oil
  • salt and pepper
  • garlic powder
Instructions
  1. Preheat oven to 375 degrees.
  2. Line baking sheet with parchment paper.
  3. Place tomato quarters on baking sheet with skin-side up. Brush with EVOO and sprinkle with salt, pepper and garlic powder.
  4. Roast for 1 hour.

The tomatoes have a very sweet taste after roasting.  They would make a perfect pairing with fresh mozzarella or no-knead bread.
