We had a bunch of tomatoes from our neighbor’s garden and I wasn’t sure what to do with them all. The first batch we decided to roast, and boy were they delicious!
- tomatoes, quartered or halved
- extra virgin olive oil
- salt and pepper
- garlic powder
- Preheat oven to 375 degrees.
- Line baking sheet with parchment paper.
- Place tomato quarters on baking sheet with skin-side up. Brush with EVOO and sprinkle with salt, pepper and garlic powder.
- Roast for 1 hour.
The tomatoes have a very sweet taste after roasting. They would make a perfect pairing with fresh mozzarella or no-knead bread.
We ate ours with quesadillas.
