We need quick and easy meals right now, and this is one of our favorites.  And I don’t even like lettuce…

Quick and Easy Lettuce Wraps

Serves: 4
  • 1 head of romaine lettuce
  • 2 cup white rice, cooked
  • 1 pound lean ground beef
  • 2 bell peppers, sliced
  • ¼ - ½ cup brown sugar
  • ¼ cup low sodium soy sauce
  • ½ Tablespoon sesame oil
  • 3 cloves garlic, minced
  • ½ teaspoon ground or fresh ginger
  • ½ – 1 teaspoon crushed red peppers (to desired spice level)
  • salt and pepper
  • sriracha (optional)
  1. Wash and rinse the lettuce. Set leaves on a plate.
  2. Heat a large skillet over medium heat and brown beef with peppers.
  3. Drain off the fat and add sesame oil, brown sugar, soy sauce, ginger, garlic and crushed red peppers.
  4. Simmer for a few minutes to blend the flavors.
  5. Add salt and pepper as needed.
  6. Serve with rice, lettuce and sriracha. To make a lettuce wrap, put a layer of rice inside the lettuce and then a layer of the beef and peppers. Roll up and enjoy!
