This recipe is so easy to throw together and quick to clean up. Prepare your bread the night before, and toss the salmon, tomatoes, and seasonings into your loaf pan. Bake the bread and fish together the next day and enjoy!
Salmon with Roasted Tomatoes & Basil
2 salmon fillets
1 small carton of cherry tomatoes
1 small onion, diced (optional)
Line a 9 inch loaf pan with tin foil. Place salmon fillets along the bottom. Drizzle olive oil over the fillets and sprinkle with salt and pepper. Place the cherry tomatoes on top of the salmon and toss with a little olive oil, basil, salt, pepper and garlic. Wrap the tin foil closed and let marinate for about an hour in the fridge. After an hour bake at 400 degrees for 30 minutes or until fish is flaky.
Serve with fresh bread, a slice of lemon and fresh mozzarella cheese.
