Queso Fresco to the Rescue

We have a friend whose family is from Mexico.  He and his fiance came over one night to make authentic chorizo tacos.  Let me just say, they were delicious!!
Besides the meat, the only other toppings he put on each taco was fresh cilantro, red onion, fresh lime juice and queso fresco.  I am now hooked on these toppings!  We have used them on fish tacos, chicken tacos, chicken chili and beef tacos in the last week.  You know it is good, when you eat something that many times in a week!
The cheese is a little tricky to find.  It is by the cheese section in some grocery stores, but in our Kroger they sell it in a small freezer section on the aisle with other taco ingredients.  Make sure you get “Queso Fresco” and not one of the other types.  It should say something about “crumbly” on the package.  Boy is it crumbly, when you pull the cheese out you can crumble it with your fingers…sort of like feta.
