EASY Red Beans and Rice

This dish was super easy. I threw it together in just a few minutes!

The night before I chopped the celery and sausage, filled my crock pot with 7 cups of water, set out the seasonings and went to bed.  In the morning I threw the celery, sausage, bag of beans, and seasonings in the water. Then I sprinkled in frozen chopped onion and green bell pepper and turned the crock pot to high.
When I came home for lunch it smelled AMAZING in my kitchen!
For dinner I just threw 3 cups of rice in the rice cooker and after 15 minutes we were set! I couldn’t wait to try it and Dennis couldn’t stop laughing at how excited I was.

We took this to our small group for dinner and everyone said it was delicious.

Definitely a recipe for the binder!
New Orleans Red Beans and Rice
makes: 3 1/2 quarts (it will easily feed 6-8 people, more if you serve with sides) 

1 pound of dried red beans
7 cups water
1 green bell pepper, chopped
1 medium onion, chopped
3 celery stalks, chopped
3 garlic cloves, chopped
1/2 pound sausage (we used smoked sausage), sliced
3 T creole seasoning (more or less to taste, we used 2 T and added in some cayenne pepper)
hot cooked rice
green onion (optional garnish)
Place first 8 ingredients (everything but the rice) in a slow cooker and cook covered on high for 7 hours or until beans are tender.  Serve with rice and garnish with green onion.
