Easy Peasy Applesauce

It’s that time of the year again…where apples are plentiful.  We made crockpot Red Beans and Rice again this weekend (so good!) and served it with homemade applesauce.  It was a perfect combination.
The applesauce was simple to make.  Peeling, coring and dicing the apples took some time, but it was worth it.

Homemade Applesauce
makes 3 1/2 cups
5-6 apples
1/2 cup water
2 tablespoons sugar
1/4 tsp cinnamon (optional)
sprinkle ginger (optional)
Peel, core and dice the apples.  Place apples in a large pot with water and sugar.  Cover and cook on medium-low heat for 15 – 20 minutes (or until the apples begin to fall apart).  Mash with spoon or potato masher.  Stir in cinnamon and ginger.  Serve warm or chilled.  Refrigerate leftovers.
*You can cook with fresh ginger or cinnamon sticks and remove when it is time to mash.
