A friend had us over for buffalo chicken pizza and I haven’t been able to get the pizza combo out of my head. I have no idea what recipe he used and the web was lacking in the world of buffalo chicken pizza recipes (there may have been a few hundred, but nothing that looked easy or exciting). So I developed my own. I was surprised to discover buffalo chicken sauce is nothing more than butter and hot sauce. So simple.

Buffalo Chicken Pizza
1/2 recipe for homemade pizza dough *
1 tablespoon butter
1/2 small red onions, diced
1 medium tomato, sliced super thin
1-2 chicken breasts, chopped into bite size pieces
ranch dressing (sometimes we do olive oil and a little garlic powder instead)
6 oz Monterey jack cheese, shredded (blue cheese, cheddar, mozzarella or a combination would be good too)
Preheat oven and pizza stone/pan to 450° F. In a non-stick skillet over medium high heat melt the butter. Add the chicken, pouring hot sauce over the meat until everything has a nice even coat. Cook until chicken is no longer pink.
Shape pizza dough into round circle. Sprinkle cornmeal across the heated stone or pan and place the dough on top. Assemble the pizza by spreading a very thin layer of ranch dressing over the dough (except edges). Next spread the tomato slices and onion evenly across the dough. Finally, spread the chicken and cheese evenly over the pizza.
Bake until cheese is bubbly and crust is crisp. Serve with hot sauce (if you want more spice).
*I made the entire pizza dough recipe and froze half. The day you want to make pizza for dinner just put the dough in the fridge. It was just as good from the freezer as fresh. You can read more tips and tricks here at Annie’s Eats.
