Our small group ate this up in a hurry.  I thought it was really good, super easy and I definitely wish I had some right now!

Skinny Taco Dip
  • ⅓ cup of plain greek yogurt (I accidentally used honey, and it surprisingly worked...but plain is best)
  • 2-3 tsp taco seasoning*
  • 1 can of refried beans
  • 1 can of black beans, drained and rinsed
  • 1 cup shredded cheese (I used pepper jack and cheddar)
  • 2 medium tomatoes, diced
  • 3 green onions stalks, diced
  1. In a square glass pyrex dish spread the refried beans over the bottom.
  2. Next mix the yogurt and about 2-3 tsps of taco seasoning together (adjust amount of seasoning to your liking).
  3. Spread the yogurt mixture across the beans.
  4. Sprinkle the black beans across the yogurt mixture.
  5. Sprinkle the cheese on top of the black beans.
  6. Bake at 350 for 15 minutes (if you prefer the dip to be cold then carry on).
  7. Top with the diced tomatoes and green onions.
  8. Serve with tortilla chips.
*You could make your own taco seasoning and the dish would be even healthier. I do this most of the time, but I was in hurry so I grabbed a packet from the store for this dish. I haven't found a taco seasoning recipe I love yet---but there are a ton of great recipes out there.
