Crockpot Chicken Tacos




I am always looking for quick, easy recipes that can feed a group.  It seems like we are always having people over to eat or are bringing food to church or small group.  This recipe for chicken tacos meets all the criteria and its delicious.  Wahoo!  I think we will be making this a lot in the future.

Crockpot Chicken Tacos

Serves: 10-12 people

1 envelope Taco Seasoning
6 pieces Boneless, Skinless Chicken Breasts
1 16-ounce jar Salsa

Dump everything into a crock pot and give it a little stir to blend the seasoning with the salsa. Cook on high for 4 to 6 hours or on low for 6 to 8 hours. When done, the chicken should shred easily when stirred with a fork.  (if it looks like the sauce is starting to dry out a little, just add some water to the pot)

For tacos, serve the chicken with homemade tortillas, guacamole, lettuce, tomatoes, and shredded cheese.   You can also use the chicken in enchiladas, on nachos, tostadas, quesadillas, or tortilla soup.  Or freeze the leftover chicken for another day!  This recipe would make a great addition to freezer meals.
