Thrifty Tip: Frozen Veggies

This is the time of year where fresh vegetables and fruit are abundant!  This means lower prices.  One way I save money is to buy vegetables now and freeze them for later.

I chop or slice the vegetables.  Spread them out on a cookie sheet and place them in the freezer (aka flash freezing).  Once they are frozen (after 2-4 hours) I place the vegetables in a freezer safe container or bag.  Now I have fresh vegetables in my freezer for when I am ready to use them.

Flash freezing prevents the vegetables from sticking together and locks more nutrients in than blanching them first.  Try it!
