My sister-in-law made a similar recipe when we were visiting for Christmas break and I have been craving chicken chili since our visit.  I think the fresh avocado, onion, and cilantro really make the dish.  If you follow this White Lightning Chicken Chili from Southern Living I know it will be awesome, but I made a few substitutions and we still loved it!
White Chicken Chili
serves 2-3

1/2 large onion, diced
garlic clove, minced
1/2 tablespoons olive oil
1.5 – 2 cups shredded cooked chicken
2-3 cups of chicken broth  (add more as needed)
1-2 jalapeno peppers, chopped (I used pickled jalapenos from a jar, but fresh would be good too)
2 tsp cumin
1 cup dried navy beans 
1 avocado, diced
1/2 small red onion, diced
 fresh cilantro
1 T lime juice
shredded pepper jack cheese
sour cream


Soak beans overnight following package directions. Sauté onion, jalapeno and garlic in small skillet over medium-high heat 5 minutes or until onion is tender. Add to a crock pot along with the chicken, broth, seasoning, and beans. Cook on low for 4-6 hours or until beans are tender. In a separate bowl make the salsa by combining the red onion, avocado, cilantro and lime juice.  Serve with salsa, jack cheese and sour cream.
