2 Ingredient Pumpkin Muffins

My mom came for a visit right before Thanksgiving and we had a blast!  She suggested trying this recipe, only two ingredients!  These cupcakes/muffins are unbelievably good…mmm.
Combine one can of pumpkin with one box of cake mix.  Seriously, that is all you add.

Scoop batter into lightly sprayed muffin tins and bake at 350 degrees until a toothpick comes out clean.

We glazed ours with a little powder sugar, almond extract and orange juice.
Delicious!!

These are actually a healthy option.  Pumpkin has a lot of fiber and you don’t add all the butter or oil that normally goes into a cake mix.  
I am obsessed now.  I am going to try this with a carrot cake mix next, and top them with cream cheese frosting.
