Blackened Tilapia

I have been craving fish recently.  I just keep seeing it around town and campus, but I hadn’t made the effort to buy some until this week.  So glad I did!
I saw this 10-minute Blackened Tilapia recipe on pinterest and marked it to try.  Wow!  If I had known it took 10 minutes, from pulling the fish out of the freezer to putting it on the table, I would have tried it much sooner.  This is definitely a new favorite recipe!  I may try adjusting the seasonings for different flavors, but it was great just the way it was.
Blackened Tilapia
enough seasoning for ~2 pieces of fish
1/2 Tbsp paprika
1 tsp of thyme
1/2 tsp cumin
1/2 tsp oregano
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt (I would probably add a little less next time)
1/4 tsp black pepper
1/4 tsp cayenne pepper (give or take depending on your preference)
Combine all the seasonings together in a small bowl.  Next moisten the sides of each tilapia filet (either with water or cooking spray), and coat with blackening powder.  
Heat 1 tablespoon of olive oil in a skillet over medium-high heat.  Once oil is almost smoking, add filets and cook for about 3 minutes per side (or until fish begins to flake with a fork).  Serve immediately.
