This meal was so good! We are making it again this week. And it was easy to throw together. You can’t beat that.
Caramelized Chicken with Mushroom Sauce
2 thinly sliced chicken breast
1/4 cup of all purpose flour
2 tablespoons of olive oil
1/2 small onion, chopped
2 tablespoons of butter
2 cups mushrooms, sliced thin
1/3 cup of white wine
garlic herb bread
salt and pepper
Season the thinly sliced chicken with salt and pepper. Dredge chicken in the flour, just a light coating on each piece. Heat a large skillet on medium high heat and add the olive oil. Add the chicken and brown each side, about 4-5 minutes per side. Once chicken is done, set aside on a plate.
Turn heat down to medium and add 1 tablespoon of butter and onion. Saute for 1 minute. Add the mushrooms and another tablespoon of butter. Stir, and saute until mushrooms are soft. While the mushrooms and onions are cooking butter and season your bread. I just used sliced bread, buttered and sprinkled italian seasoning and a little garlic powder across. Heat your broiler and set underneath for 30-90 seconds.
Add wine to the mushrooms and stir well to remove brown bits from bottom of the pan. Add chicken back in with the mushrooms. Serve hot with bread.
***we made pasta, but the bread was best, pasta wasn’t needed***
