Pasta with Spinach, Sausage and Parmesan

We had fresh spinach in the fridge, so after church yesterday I was inspired to make something quick for lunch.  It turned out really good and definitely easy.
Pasta with Spinach, Sausage and Parmesan
servings: 2
  • 1 1/2 – 2 cups of pasta
  • 2-3 cups of fresh spinach, rinsed and chopped
  • 4 oz jimmy dean hot sausage
  • 1 small onion, diced
  • 2 cloves of garlic
  • salt and pepper
  • red pepper flakes
  • 3/4 cup of chicken broth
  • Parmesan cheese
Cook the pasta according to package directions.  In a small skillet cook sausage, onion and garlic over medium heat.  Once the sausage is no longer pink add in the chopped spinach.  Sprinkle a little salt, red pepper flakes and black pepper to taste.  Once the spinach has wilted down add in the chicken broth.  Let simmer.  Once pasta is cooked and drained combine with the sausage and spinach.  Serve with parmesan cheese sprinkled across the top.
