Rich Peanut Butter Pie

We have made this pie several times and it is SO good!  It is very rich, and wonderfully delicious.

Peanut Butter Pie
1 pkg (8oz) cream cheese, softened (I used the reduced fat and the pie was still very rich)
1/2 cup of creamy peanut butter
1 cup of cold milk
1 pkg (3.4oz) of instant vanilla pudding
2 1/2 cups cool whip, divided (again I used the low-fat)
1 oreo or chocolate pie crust
3 squares baker’s semi-sweet chocolate (I only used two)
Beat cream cheese, and 1/2 cup of peanut butter together.  Add milk and dry pudding; beat 2 min.  Whisk in 1 cup of the cool whip.  Spoon into crust. Refrigerate.
Microwave remaining 1 1/2 cups of cool whip and chocolate on high 1 to 2 minutes or until mixture well blended.  Cool completely.
Spread chocolate mixture over the peanut butter layer in crust.  Refrigerate for at least 4 hours before serving.
Optional:  microwave 1 T of peanut butter and drizzle over pie.

  3. Hi there- found you through Tater Tots’s hop and am a new follower. This recipe sounds so good- I really miss peanut butter flavored treats! They sell it, but make nothing with peanut butter- not even candy! They don’t sell cool ship here, what do you think would be a good substitute? I hope you have time to follow my life in South Africa by http://withoutcomplexities.blogspot.com

    Have a great weekend!

  4. I will definitely stop by your blog! I would think you could substitute whipped cream. You can buy heavy cream and whip it yourself, and maybe add a little sugar and vanilla to add flavor. I am not sure if the measurements would be exact, but they should be close. Hope that helps!!
