The girls (my college girlfriends who I have been eating dinner with every Sunday night for the last two years) came over for dinner tonight. We had taco soup and cornbread. It was quick, easy and delicious. This one is definitely going in the recipe book.
- 1 lb ground beef
- 1 can of chili beans
- 1 can of kidney beans
- 1 can of whole kernel corn
- 1 can of tomato sauce
- 2 cups of water
- 2 cans of rotel
- 1 pkg of taco seasoning
- 1 pkg of ranch dressing mix **
- 1 small onion, chopped (optional)
Brown the ground beef in a skillet and drain. Then add all ingredients to a slow cooker and cook for 4-6 hours over low heat. Serve and garnish with sour cream and/or cheddar cheese.
**you can use 1/2 pkg of ranch to make the soup spicier
